How about Tchaikovsky's Eugene Onegin? There is a lot of nice music, and a fascinating story.

Any opera I hear for the first time is my most boring at that time. This changes as I become familiar with it. I do not really have a list of the most interesting. This evolves and changes all the time.

I sometimes listen through the entirety of Turandot, in particular the 1965 (?) recording with Corelli, Nilsson, Scotto, Giaiotti; in Rome, and I can't remember ever being bored by it. (I mention the performance because the parttakers can ruin the musical impression of the whole thing I guess - some times even just one person, e.g. the conductor)
